Anyone have a good recipe for pastrami egg rolls?

I made mine up, but I do something like this:

Sautee a diced onion, a bag of coleslaw mix, cut up strips of pastrami in a wok. Add a drop of salt, pepper, garlic powder, ginger, dash of soy or tamari sauce.

Take egg roll wrappers and fill and put them in a pan.

Spray with oil and bake at 425 for 20-25 minutes or so uncovered.

I found a recipe on here long ago, can’t even find it but I remember the basics. It was delicious!

Dice and sauté an onion, bag of Cole slaw, and strips or chunks of pastrami. Once browned add duck sauce and mustard, maybe 1/4 of each. Salt to taste.

Fill egg roll wrapper, fry in oil with seam side down first.

I'm feeling out of place, not being any number of Esther on here Tongue Out

I have people who don't like mustard, but a dash of that would go well in my recipe too. We serve with duck sauce for dipping.

I froze them fried and then refried a bit on yom tov. It was delicious! It's always a hit.

Can you please provide the exact recipe for the pastrami egg rolls?!
And can this be frozen and if so is it better before it's fried or after?

I've made in advance and frozen after baking. Defrost uncovered (they get soggy) and heat up minimally with partially covered pan (they can dry out easily)
