Teen lunches and snacks for school

It's that time of year, back to school, and I could really use many ideas for lunches that my teens will like, are filling, and it would be nice if they were healthy too. I could also use many good filling , on the healthier side, snacks that my teens will like and can take to school. Thanx !

Turkey reuben sandwich
Tuna sandwich with pickles
Sliced egg sandwich with mayo, tomato, scallions
Greek salad with pkg of melba toast
Cobb or chef's salad
Caesar salad with croutons
Salad nicoise
Macaroni cheddar salad
Salad with scoop of tuna or flakes of tuna

Cut apple or orange
Grapes
Baby carrots & grape tomatoes
Popcorners
Pretzels
Fruit squeeze
Granola bars
Stretch island natural fruit leather
Oatmeal cookies or bars
Wholesome muffins

This is my big challenge. I also want the food to be low calorie and filling. It also has to be interesting.

My menu for this week is:

Roasted Mediterranean chicken over quinoa and roasted vegtables

Curry chickpea salad

Chicken salad over basmati rice

Vegtable tandoori salad over brown rice

I am avoiding white bread and stressing while whole grains.

I do the same thing every day. Slice apples, baby carrots with an individual hummus pack, and a sandwich of the child's choice (of what we have). Kids generally can choose one or more of the following: tuna salad, egg salad, cheese, hummus, avocado, peanut butter. Today I was short on lots of stuff so it was raisins, plain yogurt, bread, and hummus.

After school has been shelf-stable stuff I can keep at the office, but I am switching to bananas and nuts.

This is the grilled Mediterranean chicken with roasted vegtables onsett quinoa

I used left over Shabbos chicken and left over Shabbos chicken soup. It was absolutely amazing!

Quinoa:
2 ½ cups chicken broth
2 teaspoons kosher salt
2 cups white quinoa
¼ cup minced flat leaf parsley
Grilled Chicken:
Dice size cubes of left over dark meat. Remove skin
Marinade:
2 tablespoons olive oil
1 tablespoons grainy mustard
1 tablespoon lemon peel
2 cloves garlic, minced
kosher salt
Grilled Vegetables:
1 bag mini red onion, sliced into rounds
6 mini zucchini
1 orange bell pepper, cut into strips
1 cup cherry tomatoes, sliced in half

Half the marinade went to the chicken which I grilled on a grill pan. The other half was grilled with the vegtables. I grilled the chicken first and then the vegtables except for the tomatoes.

I placed the quinoa on the bottom with the vegtables and then the chicken on top. The tomatoes were arranged along the sides of the container.

Turkey reuben sandwich - turkey, Russian dressing, sauerkraut optional

Tuna sandwich with pickles

Sliced egg sandwich with mayo, tomato, scallions and sprinkle of salt

Greek salad with pkg of melba toast - romaine, red onion, tomato, kirby, black olives, feta cheese - dressing lemon, olive oil, garlic, oregano, s&p

Cobb or chef's salad - lettuce, your fave cut vegetables, thin slivers of various cold cuts, (garbanzo beans and/or sliced eggs optional), with red wine vinaigrette or sweet creamy dressing.

Caesar salad with croutons

Salad nicoise - save leftover cut potatoes snd green beans from dinner - layer container with romaine, tomato, purple olives, quartered hard eggs, flaked tuna, potato and green beans. Add container of dressing made with lemon, olive oil, Dijon mustard, garlic, herbs, s&p
