Sorry for going anonymous embarrassed for various reasons we can only afford chicken for yt. I have a lot of shnitsels (I don't know how you call it in English) minced meat .... what can I do with It?
(Don't worry I'm not upset but I really want to take out the best that chicken can offer)

Chicken Marsala
Breaded schnitzel with hot sauce
Honey mustard chicken nuggets
Pesto breaded chicken cutlets
Sesame chicken
Hot poppers
Caramelized onion chicken
Herbed grilled (on grill pan) chicken

I think that some people refer to ground chicken (minced) as schnitzel and others refer to chicken cutlets as schnitzel.
From what I understood the OP is looking for recipes that use minced chicken. OP am I correct?
And there should be no shame in only using chicken !!

8 thinly sliced chicken cutlets
2 eggs
1 1/2 Cups water
1-11/2 Cups flour
1/2 Tbsp paprika
1 Tbsp sugar
1/2 Tbsp salt
1 Tbsp oil
1 Tbsp baking soda
1 tsp baking powder
Dash ground black pepper

Combine all batter ingredients and mix well until smoothie. Dip chicken cutlets into batter until fully coated .
Fry cutlets until golden colored. Set aside in a 9 x 13 or larger lines baking pan.
(Chicken does not need to be fully cooked at this point since it bakes in the oven afterward)

Vegetable Sauce:
2 Tbsp oil
1 onion diced
1 red pepper diced
1 green pepper diced
1 yellow pepper diced
1 8 ounce can mushroom
2 Tbsp ketchup
6 ounces apricot jam

Sauté all vegetables in oil until slightly tender. Add ketchup and apricot jam and sauté until dissolved and gravy like.
Pour sauce over cutlets. Cover pan and bake on 375 for 30 minutes.
Uncover and bake for 10 more minutes.

I make this for Yom Tov very often. It's one of my husband's favorites. It goes very well with rice.

For Shnitzel you can make it more interesting by coating it with salad dressing or bbq sauce before breading instead of egg.
You can also bread it with crumbled french's fried onions mixed with flour instead of breadcrumbs.
(anon because I spread these tips to everyone in real life)

You should be able to use the minced chicken similarly to ground meat- meatballs, stuffed cabbage, etc, just use lots of liquid so it doesn't dry out.

OP, what's Wrong with "only chicken??" Why do people think it's something to be ashamed of?? Sometimes we have "only deli" & everyone is fine & dandy with it.
Chicken wontons is delicious.

Chicken/pastrami roll ups
Chicken fingers
Meatloaf

Make a little slit in the shnitzel and add some deli (pastrami, turkey slices). It adds a lot of flavor.

1-Coat cutlets with duck sauce and French fries onions on top. Bake.
2- cut cutlets into cubes, dredge, fry. Sauteed red pepper, onion, garlic, mushrooms. Add baby corn. Add equal parts garlic stir fry sauce and sesame teriyaki sauce and let boil. Mix all together with spaghetti. (I make this for every y"t!)
3- for ground chicken- mix with egg, breadcrumbs, small broccoli florets, salt+pepper+garlic. Form into patties. Fry.

Dipping sauce:

12 oz apricot jam
4 tsp. Mustard
4 Tbs. Teriyaki sauce

Double for two pounds of chicken cutlets.

We love this recipe, the kids really like it and you get a huge amount of wontons for two pounds. It feels really gourmet, but actually costs very little to make!

ETA: Sorry, just realized I left out an important step - I'm really tired today! The wontons are deep fried in oil until brown. I make these in advance and freeze.

I don't know why, but I really like a little wine in meat, but not DH or any children like it, so I never do it anymore, I miss it at times

Yummy chicken cutlets:
2 pounds cutlets
1-2 eggs
1 Tablespoon soy sauce
flour for coating
2-3 large onions
2 Cloved frozen garlic
3/4 cup brown sugar
3 Tablespoons ketchup
2 Tablespoons teriyaki sauce

Beat eggs and mix with soy sauce. Dip cutlets into egg mixture and then flour. Bake on 350 for 12 minutes.
Sauté onions in garlic. Add rest of ingredients until boiled. Pour over cutlets and bake on 350 for 45 minutes-1 hour.

Enjoy and gut yomtov!
