For first days:

My husband is in charge of the meats. We have the smoker going, with a turkey, and he'll grill some steaks. We have a lot of smoked brisket left from RH. He said he might decide to fry some tilapia on YT.

In addition, I'm making:
Challah
Salmon
Soup (probably split pea)
Stir fried green beans
Rice (later, rest will be fried rice or sushi salad)
Roasted veggies
Sauteed mushrooms and onions
Kasha (later, kasha varnishkes)
Pumpkin muffins
Oven roasted potatoes
Salads
Dips
Poached pears
Lemon meringue or apple pie
Baked apples
Leftover honey cake
Concord grapes


For Shabbos lunch, I'm planning a Cajun dish instead of cholent, with pulled smoked turkey, sausage, beans, vegetables, dirty rice.

The rest depends on what I find fresh and good at the farmer's market. I'll probably do more potatoes and Spanish bulgur and/or curried couscous as sides.

first night
flaky bowl filled with spinach topped with glazed salmon roses, & salad drizzled w dressing surrounding the center petal rose dish.
shnitzel
bundt apple cake
spaghetti squash kugel.
3 layered ic/ices square. strawberry sorbet on bottom, then vanilla ic, top layer mango sorbet topped with marachino cherry.

lunch
sauteed shredded chicken w veggies in a ww wrap
choice of baked flanken or rib steak
gnocchi with pulled beef in a sweet & sour bbq sauce
broccoli kugel
tzimmes
3 layered dessert in cups, bottom layer lime jello, mid is vanilla ic mixed w lime jello. top is strawberry sorbet topped with slices strawberry.
plated next to rainbow seven layer cake wih same coloring.

second night
striped baked salmon fillet with diff toppings forming stripes ex sesame seeds, parsley flakes, minced garlic, black sesame...
dips
acorn squash soup with matzo balls
chicken pastrami rollup
upside down apple lukshen kugel
california veg kugel
coffee ic loaf with crushed sugar cones crust & ic mixed w pcs presidor rolls & topped with presidor rolls lined up plated with miniature

lunch
rolls stuffed with pulled beef with squash pepper mushroom letcho at side
grilled beef chuck on hotplate
grilled cutlets for kids
sauteed cabbage with bowtie noodles
sauteed celery, babycorn & mushrooms
razzle ic pie with miniature

I also made for myself dietetic dishes instead of carby side dishes quinoa w sauteed peppers & mushrooms. riced cauliflower wih satueed mushrooms.

For most of the days. I'll probably need to make more sides for the end days but I hope it covers most of it. I don't want to have to cook too much more. But with my chevrah I rarely have leftovers no matter how much I make. So we shall see

Using a pointed knife, core out the tops of Cortland apples (don't go all the way though). Sprinkle the insides generously with cinnamon. Then sprinkle with a nice amount of brown sugar (combine the sugar with some chopped nuts if desired).
Place the apples in a baking dish. Bake uncovered in oven preheated to 375 for 35 minutes.
Apples should give a bit when pressed, but do not wait until they soften completely to remove from oven, because they continue to soften once out and will "bust" and become wrinkly if baked too long.
(Sometimes I just bake them with a sprinkle of cinnamon and nothing else. Sometimes I bake them bare. My mom likes to sprinkle with cinnamon and then pour in diet coke.)

First Night
