I find that a hunk of meat results in meat that is more moist and tender in the cholent.

I dont know about cubes but when we put the whole kolichel in it becomes insanely soft and delicious. I just scatter it around before serving

Yes it’s a good choice, but I prefer cheek meat, I find that’s softest.
