I'd like to grill some skinless chicken cutlets (breasts) in the oven with olive oil and spices. What would be a better option- a foil roasting pan or a baking sheet? Thanks!

Are they whole breasts or already sliced/pounded thin?

I guess just do them at 450 about 8 minutes or they will dry out. Either pan a fine but a pan with sides should yield more moist chicken. Just make sure they are arranged in one single layer.
Brush them with olive oil on both sides then season very generously with spice mix on each side. Let the seasoning sit for 20 minutes before baking.
