I see a sale on top of the rib corn beef
Is this a good cut for corn beef
Is it soft, yummy
How long do I need to cook for

Its not as good as second cut brisket, and won't be as soft. But yes, its fine.

It's soft and delicious but KRM/Moisha's cut of top of the rib is very thin (in the package it looks like a nice piece but it's folded over at least twice). Also the grain of the meat goes in all directions, I don't think they know how to cut it right. So all in all, the slices aren't pretty. But they taste great.

I also bought a corn beef. How do you cook it?

Boil it for several hours -- 3 is probably good.
In the meantime, take 1/2 cup water and 1/2 cup brown sugar. Simmer for 5 minutes. Add 1/2 cup dijon mustard. Continue to simmer amother 5 minutes, until slightly thickened.
After meat is boiled, place in a pan (without the water, of course). Baste with sauce, on both sides. Heat in 325 degree oven for 1/2 an hour, turning meat over and re-basting twice.

You can also follow the baking instructions on the package. I like to add 3-4 cut garlic cloves and a bay leaf or 2.
