Citric acid is salty and lemony, and has a preservative effect. I don't use it much, but a lot of my Israeli neighbors do. You can use it to replace the lemon and salt in this recipe.
My quantities are all "to taste," though, so I may not be your most helpful poster. Still:
2-3 cups of boiled or canned chickpeas
Half cup raw tehina paste
Vegetable oil (or any oil that has a very mild taste)
Dash of lemon juice
Pinch of salt
Blend it all together
Put into a serving dish and top it with more chickpeas and any flavours you like. Some ideas: nuts, paprika, chopped coriander, pesto, fried ground meat, onions...
