Is there any proof youre getting "Wild Salmon" when you ask for it, and pay for it?
European farms have more contaminants than American farms, but species from Chile seem to have the least (1, 14).
Some of these contaminants include polychlorinated biphenyls (PCBs), dioxins, and several chlorinated pesticides.
Arguably the most dangerous pollutant found in salmon is the PCBs, which are strongly associated with cancer and various other health problems (15, 16, 17, 18).
One study investigated over 700 salmon samples from around the world and found that on average, the PCB concentrations in farmed salmon were eight times higher than in wild salmon (19).
Those contamination levels are deemed safe by the FDA but not by the Environmental Protection Agency (EPA).

Not really proof, but a hint.
In my experience, wild salmon tends to have less or no fatty stripes along the pattern of the meat because it moves more and eats less. It is also often less "salmon colored" than the farmed one, darker or even a bit more greyish pink. It looks kind of less attractive. The farmed ones are fed beta carotene and other colorants to make their meat bright orange.

No. No proof. You need to trust your source. No such thing as fresh wild salmon for more than half of the year. If someone sell's you wild salmon that is fresh in November, December , January , February , March, April 99.9% never trust them again .
Wild Salmon that you can buy in a store is usually one with a low fat content like sockeye.. Most of the salmon that everyone likes to buy is . Chinook which has high fat. Being that there are 5 pacific types of salmon caught wild plus all the farmed ones you need a lab to tell you what you bought. You can also learn when fishing season is for each type of salmon and know you can't get it fresh any other time.

Wild salmon should be darker than farmed salmon, less pink and less fatty.

Because there is a fishing "season". It has to do with the life cycle of the fish.

Costco sells wild salmon, frozen, at times.
Ive tasted wild salmon that I knew with certainty was wild caught (my brother fished it out of the atlantic). Its nowhere near as moist as farm raised, and is a pale salmon (duh) color. Healthier, for sure.

In the US, it is absolutely illegal to sell farmed salmon as "wild caught".
The color of wild salmon can vary depending on the time of year, and the type of salmon. Copper River salmon is almost neon orange. Chinook is a deep coral.
Because of conservation, there is a limited amount of wild salmon that can be caught each year, and they cannot be caught near spawning time. Some varieties are only available for two or three weeks out of the year. Over-fishing is a real problem in many of the freshwater rivers that they depend on.
If you are ever in Seattle, go to the Pike Place Market. The fish guys will show you what is the best in season. Tell them you want "the kosher knife", and they will filet it in front of you.
Expect to pay top dollar. You're competing with local restaurants who get there early when the catch of the day comes in.

Being that theres quite a few of us here from Brooklyn, (and specifically Boro Park) which fish place in BP do you totally trust when they tell you theyre giving you Wild Salmon?
