Seems that speed #2 is the way to go for avg if 10-15 min!

I use 6 lbs. also and my Bosch is older than that!
Maybe there’s another reason why it broke?

A piece broke off my stainless steel bowl also so I brought it to a repair shop and got it fixed. The man there told me that I should only use #1 for kneading challah.

I do 6 minutes on #2, wait 15 minutes so machine doesn't get too warm and then another 6 minutes on #2. Total 12 min

I follow @chefchaya recipe for challah. 10 minutes on high speed after all ingredients have been added

It saves time and energy for me particularly when making a big batch. I find the mixer essential for making desserts. It's a great investment

I know someone that does 7 lbs challahs in Bosch every week,
no issue with motor or hook. she uses the stainless steel bowl.

6 lbs in the white bowl will work but will kill the motor.
Use a toothbrush to get out the dough from the crevices. I have a parve toothbrush for this purpose.

I killed my Bosch with 6.5 pounds of flour. I had it repaired though and now it works beautifully again.

A heavy duty mixer such as a Bosch is much stronger than I am. The dough gets kneaded thoroughly and quickly without a lot of tedious effort on my part. I find the dough comes out better because the mixer doesn't tire out, get bored or give up like I would. If you love kneading, you don't really need one.

As for a Bosch vs hand mixer, I've never seen a hand mixer with dough hooks much less used one, so I can't comment from personal experience. Certainly my regular hand mixer isn't nearly as powerful as a Bosch (or any stand mixer).

If you get good results as is, the mixer would just be extra. On the other hand, you might find yourself baking more and finding all sorts of uses for the machine, which has many attachments available. In my case, I stopped buying bread from the store so frequently and the mixer paid for itself in savings within a few years.

Pour a little oil a minute before turning off, that will help it coming out

I do no' 3 for a good 5-7 minutes, the longer the better just not to long

Can you give me instructions

This is what I usually do for 5 lbs of flour
Oil the bowl and hook
Proof the yeast in the machine bowl
Add wet ingredients
The start adding the flour
Mix for 3-4 min- until all the flour is well incorporated
Kneed for 15 min

My dough never balls up though



Is it possible I’m not using enough flour?

Is it suppose to ball up?
