When I do this (now - winter time) I either use red potatoes that don't brown or keep the peeled potato separate in a container of water, then drain and add to the rest on Friday.

I ended up prepping the whole cholent-meat, pot., water and all in the refrigerator Thursday night. I soaked the beans separately and added them in Friday afternoon right before I put it up to cook. Came out fantastic. Thank you all for your help.
