Anyone have any exciting lettuce salad recipes that have no mayonnaise in the dressing?
Aside from the regular portabello mushroom and terra chips salad recipes?

TIA! Smile

Don't have a recipe on me but we love those strawberry/mango salads with a fruity vinaigrette dressing.

I'm sure someone here has a recipe or you can probably google it.

Honey mustard
French dressing
Just balsamic vinegar
Italian dressing

I use lettuce, tomatoes, cucumbers, peppers, purple onions, avocado... usually only some of them.
Additions would be nuts - candied or not, crasins, sautéed or roasted mushrooms or vegetables, seeds and occasionally fruit.
Feta cheese if dairy is an option.

Mix some garlic powder into low fat cottage cheese and use as a dressing. Really yummy!

I love @busyinbrooklyn's House Salad from Millennial Kosher!

Greens of your choice
Beets (I use canned), cubed
Chickpeas
Pumpkin Seeds
(Haven't tried it yet, but I think roasted BN squash would be amazing too)

The dressing is oil, balsamic, lemon juice, garlic, honey, s&p.

PM me for the exact amounts

I like plain/simple & tasty.
I just use olive oil, lemon juice, salt & pepper for dressing.

I don’t make any salads with mayo but don’t follow recipes so not so helpful- I like her salad recipes, https://cookieandkate.com/cate.....lads/

We have a lot of Israeli type salad in our house- can add chickpeas, peppers, hearts of palm, beets, carrots etc if don’t want just tomato and cucumber and use lemon, olive oil, salt, pepper, and scallion or red onion

for something different you can try squeezing fresh grapefruit juice, some soy sauce, a dash of freshly ground pepper and some olive oil. Different but totally refreshing and a big hit here.

I love baby spinach leaves with slivers of red onion and halved grape tomatoes - 2 tbsp balsamic vinegar (Bartenura branding only, not kedem), 4 tbsp olive oil, 2 garlic cloves crushed, salt and pepper to taste (I like a lot). Mix well and drizzle over salad plates.

Red wine vinegar I do same as bove dressing just swap out vinegar type and use romaine, red onion, sauteed baby bella mushroom slices, halved grape tomatoes and grilled skirt steak slices.

This lemon one is great even without the cheese. You can add more salt to taste if not using salty feta.

I have two favorites right now:

- romain or butter lettuce
- smokey coconut chips (unsweetened coconut flakes tossed in liquid smoke and soy sauce and then baked on low until dry)
- quick pickled corn-- busy in brooklyn's recipe for pickled onions but with raw corn instead of onions
- shredded carrots
- balsamic vinegar dressing (I cook my balsamic down with some maple syrup so it's thicker but doesn't really taste sweet, you can skip)

My other favorite is:

- romain, spring mix
- or even baby kale
- roasted or fresh red grapes
- baked sweet potato cubes (tossed with five spice seasoning)
- sliced kohlrabi
- if you like it sweeter add chopped Apple
- dressed in lemon juice and olive oil
- avocado makes it amazing but it's good without it too

A random dressing that I like that's creamy but no mayo is:

- ketchup
- soy sauce
- garlic powder
- canola oil
- mix and blend to taste for a tangy/tart/sweet/creamy textured dressing

I used I serve that on a classic garden salad (lettuce carrot cucumber red onion tomato or whatever I had) with those little yellow store bought croutons.

Does it have to be parve? One dressing I grew up with was olive oil, apple cider vinegar, basil, garlic, parmesan cheese. Now I just leave out the parmesan cheese when I'm making salad for Shabbos, but it really makes a difference.
