Can I use a top of the rib roast (kind of flat) to make pulled beef? Would that work? It looks more like a first cut brisket because there's not a lot of fat...

Put it in crockpot. Dump a bottle of bbq sauce on it. Cook on low 6-8 hours

I do in the oven with red wine and Montreal steak seasoning for 5-6 hours on 300. Comes out yum!!

This. I started doing this with different cuts of meat and it always tastes great. Depending on the cut , some will have thinner longer strings and others shorter and wider but the taste and texture is still good either way.

Thank you. I would like to do it in my oven. I don’t have red wine. Can I just do a spice rub or does it need liquid so that it doesn’t dry out?

I would use broth - not sure about doing it totally dry, never tried!
