Who has a recipe for latkes that my kids can make with me?

I use my regular potato kugel recipe and squeeze out excess liquid before frying:
6 potatoes
4 eggs
1/2 c oil
1 onion
1.5 tsp salt
Dash pepper
Thinking this year of adding in thin strips of deli to mix it up.
Edit- did this just now and came out yumm!

No need for oil in the recipe as you'll be frying them anyway.

8 Idaho potatoes
2 eggs
Salt and pepper.
The key is to drain out as much liquid every step of the way.

Best potato latke recipe ever . . .
1 egg (beaten)
1 1/2 Tbs flour
1 1/2 Tbs matzah meal (I substitute mashed potato flakes)
1/2 Tbs baking powder
1 Tbs salt
1/4 tsp black pepper
Mix, then add
1 onion (grated)
Mix, then add
4 potatoes (peeled + grated)
Fry in hot oil. Eat & Enjoy!
(I work with the potatoes last, so as not to have them sit out alone, who turns them gray.)
