I roast colorful veggies on a flat cookie sheet for 40 minutes at 400.
Once cooled, I make a vinaigrette for it to marinate in (I like balsamic vinegar, olive oil, fresh garlic, salt and pepper). Some people like a sweet vinegar marinade.

Before I developed allergies I loved this salad: https://simple-veganista.com/s.....alad/

I used more veggies and less chickpeas, slivered almonds instead of pecans, and slightly mashed the chickpeas.

I'll also make a tabbouleh with cauliflower "rice" instead of bulgher or cousscous

This recipe was in mishpacha some months ago. We really love it. I don’t have the exact measurements, but here it is:

Canned sweet corn, drained
Frozen peas - thawed
Canned chickpeas, drained
Sliced/chopped pickle (I use sweet/sour polish type)
Dried dill, be generous
Mayo (I add a little pickle juice)

It’s very good!!!
