Im searching for a very easy and quick Tomato Soup recipe made with Tomato sauce or Tomato juice.
Looking for winter weather comfort food.

46 jar tomato juice
46 oz water
1/2 cup sugar
1/2 cup barley
2 teaspoons salt
Bring to boil then cook on low flame for an hour

* I’m not 100% sure about the amount of salt- I will check soon and confirm |
Sounds great. Im looking to make it for 2-3 people at a time, so Id reduce the recipe. ll salt to taste.

Can tomato juice
Same amount of water
A little sugar
Salt
Black pepper
Once it bubbles add thin noodles or rice. Lower flame and cook for 20 minutes

This recipe is large- probably about 10- 12 servings
I usually freeze what we don’t use- it heats nicely

I like to make mine taste like old fashioned canned tomato soup, so I add heavy cream and a bit more sugar. Add grilled cheese sandwiches and a small salad, and dinner is complete.
To make it Italian style, add a couple cubes of frozen pesto (or a couple teaspoons from a jar, if you have it), and garnish with Parmesan cheese. You can also add cooked pasta and some sauteed zucchini to the soup for variety. Serve with garlic bread.

When I'm feeling fancy and patient I start with sauteeing onions- adds a yummy flavor.

Fry finely chopped onion
Add minced garlic 30 sec before adding
Passata
Salt, pepper,
Oregano/basil or preferred herbs
Cream (for milchig option)
Olive oil before serving
(The passata I get is not very thick so I never need to add water)

I just tried this recipe because it says its from a website and seemed easy. (I just checked Kosherstreet.com and they dont have a Tomato Rice Soup recipe. They may have removed it?)
There are lots of onions relative to the tomato juice and I wanted it smooth like the old Rokeach Tomato Rice Soup (I think they may have stopped making it and now sell only Tomato Soup) so I blended it and it lost the beautiful rich red color and became more orangey when combined with the 2 onions. By the time I decided to blend it, I had already put in the rice, so the rice got broken down to dots, with my hand blender.
All in all, its very good tasting!
Next time Ill use way less onion, and maybe no rice, and eat it with croutons instead, because the rice took forever to cook.
