2 1/2 C warm water + 2 tsp yeast and some sugar. Let bloom 10 min.

Mix 7 C flour
6 Tbsp EVOO
1-2 Tbsp kosher salt
Yeast water

Knead 10 min, let rise 2 hours.
Preheat pizza stone to 500. Stretch dough into a pie (it makes 8 personal pies), add pizza sauce and mozzarella. Bake for 8 min.

(For pizza sauce, I just mix tomato paste with salt, pepper, garlic, basil, oregano, and cumin. Mix with a drop of hot water until it's pizza-sauce-able)

3/4 c boiling hot water

mix for 5 minutes and put it in a plastic bag to rsie for a few minutes.

this makes 4 personal pies. add sauce and cheese and toppings

Last night was chicken and dumplings. Tonight is spaghetti with other things to round it out - I'll make tuna, salad, etc.
