Looking for an easy salad recipe to serve with the fish course that doesn't involve lettuce. Something like the tomato, avocado, hearts of palm recipe from BY cookbook (but not that, because I'm already making a salad with those ingredients in it). Nothing complicated that involves cooking (like quinoa salad).

Any ideas?

My favorite Mexican corn salad:

1 can of corn kernels, or the same amount of frozen/defrosted.
1/2 jar of your favorite salsa, either mild or medium
1/4 cup of sliced black olives

If parve, add a few tablespoons of mayo, just enough to make it look a bit creamy.

If dairy, do the same with sour cream. If you are doing dairy, you can use a spicier salsa, because the lactose balances the flavor out very nicely and tempers the heat.

This actually tastes better the next day, so it's a great thing to throw together in advance.

Broccoli salad, the one with the craisins, cashews, and red onion.
Dressing is 1/2 cup mayo, 1/2 cup sugar, 1/4 cup vinegar. This is my all time favorite salad to serve with fish course. Can make it with frozen (defrosted) broccoli, but way better if you can get your hands on fresh broccoli!
