I see a lot of posters here serve grilled chicken cutlets.

What does this mean - do you use a grill pan or can it be done in the oven?

Is that what everyone does? I've never seen anyone using that here, I wonder if it's an American thing. I like the idea though since then maybe we'll like it without all the oil and frying.

I use a cast iron grill pan. Basically everything you make on it tastes wonderful.

I use a grill pan or my outdoor grill. We grill all year round even in the cold.

You can do really moist grill style in the oven.
Use whole cutlets only for this. They can't be sliced - need to be full and round to retain juicyness when making this way in the oven (boneless, skinless).
Brush with oil all around. Season very generously with smoked paprika, smoked garlic and salt. Let sit for 30 minutes while oven heats to 450.
Then place 4 whole breasts side by side in a 9x13 pan and bake at high heat for 25-28 minutes.
Remove from oven, cover with foil and let sit for 10 minutes before slicing on the diagonal. Perfect over salad. Or refrigerate and slice it fresh for salad before ready to serve.

By definition, you cant grill in the oven. I use my grill pan or outdoor barbecue.
