CS Posted this salad on the regular salad thread, and it's great!!!
I'm actually making it today for a big BBQ gathering. (thanks CS!)

(cut and pasted from CS's post:)

Pasta with Garlic Dressing

Cook very thin spaghetti.

Dressing:
¼ cup olive oil
¼ cup soy sauce
4-5 cloves of crushed garlic

Lightly toast garlic until almost brown in olive oil. Add soy sauce into pan and immediately pour over warm pasta. You can add pepper and green onions to mixture. This salad tastes delicious either hot or cold and for some reason, kids love it.

smashed olive salad is olives procesed in the food processer until they look "smashed" Wink and add mayo. and possibly something else not sure.

hey no fair making fun...
my kids dubbed it smashed olives- and that stuck!
its olives mayo and garlic- fresh.
true not really a salad, but counts as one when I make my shabbos list!

Here are 3 for you:
1) Marinate: sliced zuccini,carrots, diff. colored peppers marinate with lemon juice/oil/salt/pepper

2)Cooked eggplant: Chop saute onion, add sliced mushrooms & sliced green olives, peeled and cubed eggplant. Mix everything in pot & add tomatoe sauce, garlic powder (or minced fresh garlic) & a little water. Cook everything for about 20 min. total.

3) Shredded Beets with lemon juice/salt/oil
or
cooked beets

here goes Lucy ,: ( from my hubby's aunt Wink )

You could really play around with this recipe and vary the vegies and their amounts.

1 Onion -diced
1 Green pepper- diced
1 Red pepper -diced
1 Carrot peeled and diced
2 Zuchinni-peeled and diced
1 Eggplant peeled and diced

Seasoning
Tamatoe Paste
Lemon Juice
Paprika
Sugar
lotsa garlic
Salt
Pepper

1. Saute Onions
2. Add Green and Red Peppers, Saute till soft
3. Add Carrots and Zuchinni, Saute till soft
4. Add Eggplant, Saute till semi soft.
5. Add a little water and let it cook for 1/2 hour till everything is mushy. but you could still see resemblance of vegies. constantly check to see that it isnt burning add little more water if needed.
6. remove from fire and add seasoning. I sometimes use the tamotoe paste with garlic in it, so then I don't put in garlic.

BTW I thought of a few
coleslaw (either with mayo or without)
Brocolli salad (in Kosher by design it says it can be made days in advance though I'm skeptical...)
Cabbage salad with mayo/vinegar/sugar dressing and then add toasted pinenuts and currants on shabbos
marinated vegie salad (I think someone may have mentioned it)

I was just trying to change my repetoire.

note, many of these salads are great for pesach too!

Brocolli gets very soggy when left in the dressing... it depends how you like it!

pasta salas:
1/4 cup vinegar
1/4 cup soysauce
1/2 cup sugar
1/4 cup oil

spray tray with pam
sliced almonds, sprinkle with sugar and sesame seeds respray with oil.
bake till toasted- takes only 3 min.

cook curly pasta- the tricolored one. toss it all together!

pepper:
chop red yellow orange green, pepper tiny.
saute a choppped onion.
add peppers
saute for 5 min or so.
add hunts tomato sauce.
simmer for half hour till soft.
add sugar about 2 tablespoons to taste.

bake eggplant till soft. 1 hour or more
saute tiny onion, green pepper an d tomato. add crushed fresh garlic.
suate in OLIVE OIL. don't subsitute.
scrape out the eggplant and add it to the sautesd veggies. whip all togehter with a fork.

add tomato PUREE- not paste not sauce.
add enough till it turns red in color.

simmer after half hour, add more olive oil.
add salt, pepper lemon juice to taste.
