For reasons beyond our control our vacation in Israel has been extended by a day and we are thinking of traveling south.
Any suggested itineraries?

It depends how far south, but just a little south would be Masada, Yam Hamelach, and Ein Gedi. Farther south would be Mitzpe Ramon.

What do you like to do? What ages? How far do you want to travel? There are tons of beautiful hikes in the Judean Desert. Metzada, the Dead Sea, the science museum in Beer Sheva is supposed to be very good. The Airforce museum near Beer Sheva.

Beer Sheva is accessible by train.

Do your research before going to the Dead Sea area. A large amount of the coastline is closed to the public due to sink holes. Ein Gedi is a ghost town. Ein Bokek is till open.

There are a few beaches open in the north, where route 1 goes off to Jerusalem. By the time we arrived there from Masada after searching all over Ein Gedi for the way to the beach that used to be there, it was 15 minutes to sunset
