I'm super inexperienced with meat. What's the best glaze for mock short ribs? I would prefer to use my Instant Pot since the meat comes out unbelievably melty in under and hour. Any suggestions?

Could someone explain to me what exactly short ribs are?
What are mock short ribs?
Is it the same cut as flanken?
