Is there a difference in how chulent tastes if it’s cooked overnight in the oven instead of a slow cooker?

Yes because they cook differently. Water amounts will be different. Trial and error.

Ok that makes sense. Follow up question- if I use a recipe that was meant to be cooked on the stovetop overnight, what would be a closer approximation to that- slow cooker or oven? Sorry for the run on sentence.
