Green beans are our fave.
Summer squash (2 color zucchini) and tomato saute.
Tri color veggie fries [parsnip, beets & carrot (though I prefer sweet potato for the orange)].
Spaghetti squash.

I do a mix of peppers, canned mushrooms, frozen sugar snap peas & baby corn. Sauteed with onions first a bit then bake with soup mix.

My family loves zucchini and I make it lots of different ways, all easy.
Laziest way: slice zuchinni and cook in whatever tomato sauce you have. If serving with milchigs, you can melt some shredded cheese on top.
Very slightly more time consuming: slice zucchini into a baking pan. Dot with halved cherry or grape tomatoes, drizzle with olive oil and salt.
This is one that I discovered by accident (it was supposed to be turned into soup) and has become a favorite. Slice zuchinni, and leeks and roast as above.
It is also possible to use your peeler (or a "zoodler") to make zuchinni noodles, which you can serve any way you serve pasta.
