Tomato Pasta Spinach Soup
Got online somewhere - wish it had a catchy name, but it doesn't !
1 T minced garlic
2 tsp oil
6 cups water
28 oz can tomatoes, crushed or whole; or equal amounts of fresh
1/4 tsp herbs to taste - we like Italian
1 cup small pasta, any kind; leftover is okay too
1 10 oz box frozen spinach
1 15 oz can beans; any kind
salt and pepper to taste
grated Parmesan cheese, optional
In your favorite (or pareve) soup pot, heat oil and garlic until aromatic, and add the water, tomatoes, and spices. Let boil and add your pasta, cover and let cook about 5 minutes. Add the spinach and break it us as it thaws, let cook about 5-7 minutes longer or until pasta is tender. Stir in your beans. Heat and serve.
Sprinkle Parmesan cheese on each bowlful, optional.

This is the easiest soup ever and dh LOVED it. He finished 4 (!!) plates!
I left out the beans since we don't go for that and added sauteed onion.
