After I get my sheitel set, I have a beautiful curled sheitel that looks great...until it start getting knotty. And when I brush out the knots, I invariably end up brushing out the curls too.
Is there a way to get rid of knots without removing curls?

Does it get knotty at the nape of your neck? You can comb just the knotty part with a wide tooth comb, and even use detangling spray so you use less force combing. Hold it by the bottom of the cap so you are combing the underneath instead of the top layer.

Comb the curl gently around your finger. Set it in a Velcro curler tokkepit right.

Finger comb the knots out. I turn the caps inside out which helps get the curls back.

You can only brush it from inside
(The side that touches your head/neck)
