Does anyone have an easy chicken cutlet, pastry dough recipe for a cutlet? (Puff pocket) Maybe a mushroom sauce as well?

I mash up chopped broccoli with an egg and breadcrumbs (salt and pepper to taste, and then spread that over one side of a p.p. square. Then put a piece of raw chicken cutlet over top and fold. I like to make it into a triangle shape. Egg, then bake!
And I serve with a mushroom sauce (any basic mushroom sauce recipe)

Chicken wellngton in balabusta choice cookbook #1.
Broccoli mixture, chicken cutlet strip mushroom mixture on top. I for prettier presentation I expose/show one side broc & one side mushroom by pinching only two sides together & placing mixtures on both ends.
