It depends on the container/wrapping you will be using. If it's airtight, or mostly, I would do it Tuesday (defrost in morning, assemble in evening). Otherwise, I would do it Thursday morning.

How is the wrapping? Will it get hard? If your packaging is good then Tuesday should work.
