How careful about leaving food out

so I feel like I can't figure out food safety and then my ocd kicks in and I fall apart. I cook and then I let the food cool before I put it in the fridge but then if I'm making something for late that day it feels like I'm letting it cool just to warm it up and I can't make everything the second before the seudah... I just don't get it Sad
like right now I'm all worried that my gravy was left out too long cumulatively. I put the meat away but then I had to run for shaloch manos and didn't put the gravy away and it was probably 2 or 3 hours out and this is in addition to when it was cooling. can I no longer use it. have no idea how I'm going to warm up the meat Sad
I'm totally overwhelmed and regret agreeing to host Sad

What do think people did before fridges. If it's not hot things will be ok out of the fridge. If its very hot out you need to be more carefull.
