I'd like to use up Oatmeal before Pesach. Anyone has a simple and healthy recipe for a breakfast muffin (wheat and sugar free)?

Do you have a go to wheat recipe? I make mini muffins and have substituted finely processed oatmeal for ww flour with satisfactory results.

Check out Cookie and Kate's website.
I remember something about her being sponsored by quaker oats. She certainly incorporates oats into many of her recipes.
She has great, healthy stuff...her blueberry muffins are fantastic.
