While pesach cleaning, I came across our Esrog which I had put aside to make esrog jam but never did, lol! What can I do with the Esrog now? I was afraid to open the box thinking it would look moldy, and was surprised to see a beautiful yellow Esrog as if I had just purchased it yesterday.
Any suggestions would be appreciated.

OP here again. It was not refrigerated, but was sitting in it's original cardboard box on top of a bookcase.

If it’s not rotten and it still has the fragrance, then there is no reason why you shouldn’t be able to use it. Just make sure to peel it because the skin is full of pesticides.
