I buy lots of beans and lentils raw and I cook them. They are healthy and cheap because of protein /fiber....
I was wondering if anyone knows any foods kosher lpesach thats cheap. I think everything healthy is expensive like salmon...but I figured I would ask in case.

eggs. Nuts maybe? I don't think you need a lot of nuts to make a balanced meal. Vegetables. Lots and lots of them. Tuna. Chopped meat or chicken can be stretched to make a meal. Potatoes!
My vegetarian friend skips eating eggs for a couple of weeks before pesach because she eats so many on pesach. I also eat tons of eggs.

Produce is very healthy, and we buy ours in cheap "ethnic" stores. Most Americans eat more protein than necessary anyway, and especially for one week it's really not a big deal to have less than usual (unless on a special diet).

We ear a lot of plain cooked potatoes. Boiled plain in water with an onion, salt and pepper it's probably not THE most healthy food in the world, but not the worst either. And it's cheap. Eggs, potatoes and lots of vegetables is fairly healthy for only a week.

You can mix mashed potatoes with tuna/salmon to stretch it and make patties.

grilled veggies and lots of salads. We don't eat a lot of potatoes all year, but pesach we do.

Do you have recipes? I found recipes for quinoa burgers with breadcrumbs which I suppose could be replaced with matzo meal if one does that (we do) but the reipes I found for mushroom meatballs had oats and the hits I got for walnut tacos were vegetarian walnut fillings to be served in a taco but what would you serve it on during Pesach?

I make all of these one year for a vegetarian.
The tacos were served in bib lettuce cups.
I used a very light fine matzah meal from Osem for the quinoa burgers and mushroom meatballs. Served meatballs with zoodles and mashed potatoes. Burgers in pesach matzah meal buns.
