If you make your own gefilte fish rolls, all year or only for Pesach, what equipment do you use?
I'd be getting the fish already ground from the store and adding stuff to turn it into gefilte. Do I need any specific appliance?

If you are getting the fish ground, all you need to do is add the rest of ingredients, form logs, wrap it tightly in parchment paper and silver foil & cook.

It's needs to mix mix mix with the paddle attachment if you want it to hold together and not have a grainy kind of texture.

Ludicrous, why do you beat egg whites and sugar for fish? Doesn't it come out too fluffy/cakey?

You have to beat the eggs for a few minutes on high.
You need a heavy duty mixer for the fish or the motor will break. Although the fish mixture is soft at first,after mixing for 10 minutes it turns firm, like dough.

Happens to be I don't beat the eggs first, I put everything in the mixer and let it go for a while.

if you are making a smaller amount, technically you only need the mixer to beat the egg whites, and you can mix everything by hand after the egg whites are stiff
