I usually make my challah dough and immediately after 2-3 hours of rising I continue with shaping and second rise and bake... how would I do it if I want to shape and bake it a few hours later?

Chanie I sometimes do it that way too. I just shape and let it rise for 1 or so.

Put it in the fridge to temporarily stop the rising.

Many times I prepare the dough at night, then place bowl in platic garbage bag, and put in fridge. (bag will catch the rising dough pouring over the sides)
Remove dough from fridge SEVERAL hours before wanting to shape to allow adequate time for returning to room temperature.
(I find this easier than doing whole process at once)
