Please post KLP easy wholesome dinner ideas for this week.

Please post kosher for pesach (non kitniyot) easy, wholesome dinner ideas.
What I came up with so far:

Meatballs (beef or turkey)
Burgers, chicken or beef: what should I use for filler instead of breadcrumbs?
Chicken vegetable stew
Roasted chicken with roasted potatoes and veg
Salmon with soup and vegetables

Does anyone have a good KLP burgers recipe?
How about good, easy sides? Salads that last a few days?

Any non-grilled (no grill pan either) chicken cutlet recipes?

Please post any suggestions to keep my family full this week while not tying my hands up too much!

Chicken and potatoes , meat and potatoes, ground meat and potatoes, hot dogs and potatoes, hamburgers, and veggies on the side of any meal.
But really I would like them to eat outside with bread so you don't have to cook chometz but they wont get tired of a whole extra week of Pesach cooking and will still be full.

I use mashed potatoes as a meatball filler. Cook a few potatoes in skin, peel and mash with fork. Will harden as cools. Combine with any ground meat or chicken mixture.

Make burgers and serve outdoors in bought buns. No fillers necessary.
For meatballs use mashed potatoes or instant flakes as filler.
Chicken breasts, grilled style, in the oven at 450.
Salads that last a few days: cole slaw, cucumber salad, beets salad, carrot salad, marinated salad.

Chicken cutlet recipe
Make a thick batter out of eggs and potato starch. Salt to taste. Fry. It's YUMMY!! Sorry can't give exact measurements- it all depends on how much cutlets you make. I usually crack open 2 eggs and add potato starch and whisk together. Then I see if it's too thin. I add enough potato starch for it to be a thick liquid batter

Take a whole chicken. Rub with a mix of equal amounts garlic powder and paprika, mixed with a drop or 2 of water to make a paste. Throw it in a crockpot for 4 hours, or bake in the oven.

Hamburgers can be cooked anywhere.

Meatballs don't need filler.

Chicken cutlets are very versatile. I do a Chinese style ginger chicken and mushrooms, that can be served with a side of your choice.

Roasted veggies are a good, easy side. So are green salads and raw sliced veggies, or zucchini sauteed with onions, and whatever else (peppers, tomatoes) you like.

Don't rule out dairy choices too! Lots of ways to cook eggs and cheese, or potatoes and cheese.

Shakshuka
Meatballs and quinoa
Doughless potato knish with hot dogs inside
Shredded chicken with spaghetti squash
Sweet potato toasts, if you want to patchke.
Meatloaf with potatoes and sweet potatoes. Someone posted recipe for that here once and I make it all the time. You make a regular meatloaf and put in pan surrounded by cut up onions, potatoes, and sweet potatoes. Then you make a glaze of equal parts ketchup and pancake syrup and pour over whole thing. Bake covered for about an hour, until potatoes are soft.

You can buy pesach crumbs! I make my regular burger recipe- ground meat, egg, onion soup mix ,bbq sauce, mushy crumbs. Mix all together. Smear bbq sauce over top. Broil or grill.

Looks delicious but a bit more time consuming than I'd like for this week. Maybe I'll use for Chol Hamoed.

this is kind of the week for burgers, hot dogs etc in pita. (less crumbs then buns) Thats my plan. I have a lot of non klp sausages I will do in george foreman. Salads can be made in pesachdik kitchen and bought to chametz table.

I'm not making complicated meals this week.

I make them now, freeze and use for Erev Pesach.

I begin my Pesach cooking with boiling 24 eggs & 24 potatoes so I have those in the fridge for recipes that call for that
