Year round I think avocado oil is the best oil for frying. On Pesach I use grapeseed. Which also works well for baking. I use extra virgin olive oil for cold things (salads) and roasting vegetables.

I fry withbeef tallow and schmaltz that I make myself. I roast with olive oil. My
Mother in law found me some klp avocado oil but it’s crazy expensive. I’ll make mayo out of that.

You could not pay me to eat cottonseed oil. Have you seen how that stuff is made?

We would also use coconut oil if we could find it. So far no luck.

I made mayo out of beef tallow today!

Extra light olive oil, walnut oil.
One year we used pistachio oil (iirc) had green tinge.
Avocado oil is healthy but more $.

Im ok with it too.

I just used Avocado Oil for chicken and it smelled and tasted fine.

Not all avocado oil is the same. I don't like avocados, but the Chosen Foods avocado oil is mild enough that I don't mind it.

I use extra-virgin olive oil or schmaltz for everything. But I don't really bake.

I actually spent some time looking into the subject this year. (Why? Because I mistakenly dumped in my whole bottle of EVOO to the pan I was going to make fries in for dinner the other day, and heated it, before realizing it wasn't the extra light. Oops.)

Short of cottonseed oil, which is vile stuff, most of the choices aren't THAT different. Frying temperatures are considered medium heat (not high heat), so a lot of the choices don't get up to smoke points.

I've been using triple filtered coconut oil for some baking, and either extra light olive oil or walnut oil for the rest.
