I second lemon curd. Although I’d probably make mayo. Or zabaglione! (Sabayon)

You can make a chocolate cream to fill between layers of a cake.

Lemon curd! It's what goes best with meringue, after all!

Vanilla custard, topped with fresh berries.

Tons of recipes online, pick the one that seems easiest. You'll want to cook the mixture in a pot that is on top of a pot of boiling water (double boiler) so the custard won't overcook and separate.

I'm just doing this now and there's something wrong. It's way too dry.
Are you sure this is accurate?

3 cups ground almonds
4 egg yolks
1 cup sugar

Doesn't need potato starch.

But the mixture wouldn't come together, it was much too dry. I added some oil in the end and they're sort of okay. Thanks.

Do you mix by hand? It's so dry I can't form balls with the mixture

Flourless Brownies.
12 egg yolks
1 bag semi sweet chocolate
1 tbl spoon insta coffee diluted w hot water
1 tsp of vanilla sugar
1 stick of margarine
1 tbl spoon cold water
8 tbl sugar divided

Cream egg yolks w 4 heaping tbl spoons of sugar till pale yellow/off white color. Set aside in fridge. Melt chocolate w margarine, water, remaining sugar, vanilla, and coffee(I do it on stovetop w pan) stir constantly, do not burn. Let cool in bowl. Once cool (I dont wait too long) fold egg yolks into mixture slowly. Bake at 350 for 20-30 min depending on pan. You can check w toothpick. I prefer it on the runny side but up to you!
