I always bread and freeze tons of chicken nuggets before pesach.
Any tricks for how to do this efficiently?
I've tried pans and big bags. Everything just clumps up.
Any brilliant tricks out there?

Do a bit at a time. You can't dump them all in a big bag at once. You can't put all the crumbs into the bag at once either or it will all get wet before it's used. Change the bag to a fresh one when the sides get wet too partway through.

Another way is to beat up the eggs in a bowl and mix up the nuggets all at once into until evenly coated.
Then lay parchment paper on cookie sheet. Spread a thin layer of crumbs. Lay out nugget pieces one by one in one layer. Press down. Then sprinkle top layer with crumbs. Press down.

I egg in a bag and bread on a plate.
Cut up and throw in bag with egg. When the bags full, mix around, pull out chicken, bread it from a plate and stick it in the pan. Repeat.

lay them out on a cookie sheet to freeze, then place into a smaller pan and cover, it might help with the sticking

Designate a “wet hand” and a “dry hand” to keep crumbs out of the eggs and vice versa.

When you freeze put parchment paper between layers of breaded cutlets so one on top doesn't stick to the one underneath
