Looking for an idea what to make for the main dish for Seder ? Made only with basic ingredients no spices and peeled veggies?

We serve the same every year. Baked chicken, potato kugel, and apple pie.

Do you use wine? Schmaltz? I'm thinking of frying veggies, maybe rubbing aromatic veggies into chicken, putting chicken on top, pouring over wine, and letting it simmer. Oh, and put potato chunks - yellow or red would be marvelous - around the sides. The juices will release and make it halachically fine for seder and delicious to boot.

Dumb question maybe. Is it ok to serve fried crumbed chicken schnitzel that has been reheated in the oven without a sauce? I've never done this before.

I mean from the halachic perspective of not roasting meat

OP, I slice tons of onions, put the chicken on top. I mix oil with salt & spices & brush/pour on chicken. I add some carrots, cover & bake on 350 for 3 hours.

For first seder, are you leaving the food in the oven from before Shabbos until shulchan orech? What temperature? Or some other ideas to keep food from drying out? (Vs. usual seder where I'd reheat closer to serving time)

I made brisket. It's easy to make, doesn't dry out and freezes well, so it was an easy choice.
I'm going to have to add something chicken too for 2nd seder since I have no-red-meat eaters coming that night. Will serve with potato kugel and sauteed veggies. We'll also likely eat this meal all week long as nobody eats much at the seder. With all the matza and wine plus I have fish first and soup, I probably don't even need a main course at all but I feel compelled to make it.
