I'm sorry I don't have links but our favorites are actually potato starch or nut based though we also eat gebroks. Check out kosher.com.

I break up matza and soak it in orange juice until it is very soft. Add peeled & sliced apples, eggs, brown sugar, & cinnamon. Bake at 350 till done (depends on what type of pan you use). People always love it (they even eat leftovers after Pesach).
I’m sorry, I don’t have exact measurements but I can tell you approximately what we did yesterday:
We only use hand matza. We broke up about a pound.
Added probably 2-3 cups of OJ (let it sit a while, mixing occasionally till it’s soft)
Peeled 8 apples (but my kids were eating them, so not sure how many actually went in)
About a cup of brown sugar
11 eggs
Sprinkle of cinnamon.
We made 4 (pretty high) loaf pans but it also works in 9x13 or round.
Freezes beautifully!

I have this recipe no gebrokts, though:
Bottom:
Thin sliced apples
Cinnamon, opt.
1/4 cup sugar
Little lemon juice
Crust:
2 eggs, separated (whites beaten)
1/4 c. Sugar
Dash salt
Dash cinn.
2 t. Lemon juice
1/4 cup potato starch
Crushed nuts, (opt.) On top
I double the crust recipe to cover enough apples
