my family doesn’t eat those vegetable kugels, so I’m left with potato and apple kugeles. Any non- kugel recipes?

Do you not eat vegetables on Pesach?
Roasted broccoli with red onions
Curry cauliflower
Peppers and onions with or without sausage
Roasted butternut squash with balsamic vinegar and olive oil
Roasted carrots with honey and olive oil
I don’t get this whole “all we can eat is potatoes”. What do you normally eat?

Sweet steamed carrots
Courgettes in tomato sauce (or without)
Red or white cabbage
Sweet potato pie (with pecan crumble top)
Shallots in red wine

we eat peeled vegetables.
my kids are meat-and-potatoes type and will not eat any of the above.

Zucchini spaghetti salad is fun.
So it 3 color vegetable French fries.
Cucumber salad
Cole slaw (or kohlarabi)
Butternut latkes
Spaghetti squash kugel is delicious - doesn't taste like squash
Vegetable salad with romaine, red onion, Kirbies and julienne carrots.
