DH makes it with ground nuts. Also coconut chicken is delicious.

Toast ground nuts in a greased pan for 2 minutes with salt and seasoning. Yummy crumbs.

Sounds like you’re pretty limited. why not just skip it for the week? Unless matza meal is an option?

Crushed potato chip. (Too oily for my taste though.) I’ve done a recipe like Latka style coated. Dip in eggs mixed with spices. then grated potatoes and fry. Maybe someone here has an exact recipe.

Make Pesach crackers (I hope not egg free as well!). Crush into crumbs. Use as crumbs on chicken!
Or you could buy the Gal Gal pesachdik crackers & crush those.
It's all just potato starch but should come out better.

Don't the Pesach crackers have potato starch in it?

Op you're pretty limited.

If it's no potato starch because you don't use processed foods you can "bread" it with potato kugel mixture. I once saw such a recipe in one of the magazines. I don't remember exact instructions maybe someone else does.

Saw in magazine to coat with shredded sweet potato.
You can also coat with diced onions & fry.
Plain fried with spices or with a coat of eggs & spices.

Go to Between Carpools, Type pesach schnitzel in the search bar.

Try arrowroot powder instead of potato starch...
