I am thinking to start using only spelt flour for baking and to buy only spelt pasta. Is it healthier, even if I will still use sugar and canola oil? And I'll use white spelt, not whole grain.
I already do only spelt challah. Started because of a diet and continuing because dh and I feel less bloated after meals.
Did anyone see a change in there kids by switching? Where they calmer, slept better?
What other small but significant changes can I make for us to be healthier?

My understanding is that spelt is easier on the stomach and slightly lower gluten content. That’s about it.
