It is a 1:1 ratio so if you need 1 cup of oil, put in 1 cup of apple sauce.

No. Use unsweetened applesauce

I would just make a different type of bread that is meant to be oil free. I have had oil free challah and didn’t think it was worth eating

I have found that this substitution only works well in certain recipes. you just have to try it to see how it works out. I'm wondering if this affects the brocha that you would make on the challah I.e. mezonos pita is made with apple juice.

I read somewhere to only substitute half of the oil so for 1 c. oil, I'd use 1/2 c. oil and 1/2 c. applesauce.

yes good point abt mezonos but I think if it still has one liter water it should be fine, dor mezonos you have to substitute water for juice not oil
