I went to someone's house for shabbos years ago and she made a DELICIOUS lentil salad! I asked her where she got the recipe and she told me from one of the frum magazines :/
If anyone has any good lentil salads to share, with instructions (soak? boil? the lentils) please reply to this thread!
She served it shabbos day with cholent and another salad and it was great!

Boil green lentils 1 c. lentils to 2 cups rice till most of the water is absorbed and lentils are soft. Drain remaining water.
When cool mix with parsley, cherry tomatoes and walnuts.
Dressing of red wine vinegar, splash of mustard olive oil and salt
