I'll take any and all recipes Smile

I already have recipes for oatmeal chocolate chip cookies, blueberry muffins and brownies.

Any other super easy cookie or cake recipes?

the best no-butter chocolate chip cookies

3/4 cup coconut* oil,** melted (measure it melted, it's a bit less than a cup in solid form)
3/4 cup light brown sugar, packed
1/4 cup sugar
1 egg
2 teaspoons vanilla extract
2 cups flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
10 oz. chocolate, chopped

Preheat the oven to 350 F. Line 2 baking sheets with parchment paper.

Melt the coconut oil. *Use refined coconut oil if you don't want the coconut flavor in your cookies, and unrefined coconut oil if you want a rich coconut taste. **You can use canola or vegetable oil but you won't get the same rich taste and texture. You may want to add more sugar if you're using regular oil as well.

Let the oil cool slightly. Add to a large bowl with both the sugars. Stir.

Add in the egg and vanilla and mix well.

Mix the flour, cornstarch, baking soda, and salt and add into bowl. Mix till JUST combined. Stir in the chocolate.

Round large balls of dough between your palms and place them on the baking sheet. DO NOT FLATTEN.

Bake 8-9 minutes for smaller cookies, 10-11 minutes for larger cookies. The edges should just barely be golden. The cookies may not look ready, but will continue to bake on the sheets after they're removed from the oven. If you like crispier cookies, bake 2 minutes longer.

Let cookies rest on sheet for a few minutes to firm up and set. (Or just eat it right away, 'cuz who are we kidding.)

Why no oil?
Between Carpool Pesach Blondies are really good but it has oil.
I use stevia, coconut oil and unsweetened chocolate. It comes out perfect even with the substitutions. I like to add chopped pecans, but it’s good even with out.

Chocolate cake, brownies, blondies, pound cake, cinnamon swirl cake, lemon cake, honey cake, carrot cake (you need to grate carrots).
Crinkle cookies, sprinkle cookies, chocolate chip cookies.

I've made these, grandma's soft sugar cookies. Not the greatest, but fast, easy, and good! Almost any cake that doesn't have margarine, which is most, or whipped eggs is usually pretty fast and easy and a mixer is not needed.

2 large eggs
2⁄3 cup vegetable oil
2 teaspoons vanilla
3⁄4 cup white sugar
2 cups flour
2 teaspoons baking powder
1⁄2 teaspoon salt

Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.
Drop by heaping teaspoon approx 3" apart on an ungreased cookie sheet.
Flatten with bottom of glass moistened with water and dipped in sugar.
Bake at 400°F for 6-10 minutes or just until lightly golden.

Cookie Butter Bars

3 cups all-purpose flour
1 cup sugar
1 cup neutral oil (such as vegetable oil or coconut oil)
1 large egg
1 teaspoon Gefen Vanilla Extract
2 cups crunchy Lotus Biscoff Butter
10 Lotus biscuits, crushed

No-Mixer-No-Bowl Oatmeal Squares

Ingredients
2 cups oats
1 cup Wonder Mills whole wheat flour
½ cup sugar
½ cup brown sugar
½ teaspoon salt
½ teaspoon baking soda
½ cup chocolate chips
1 tablespoon vanilla sugar or 1 teaspoon vanilla extract
2 eggs
½ cup oil

Instructions
Preheat oven to 350ºF.
In a bowl, or directly in a greased 9- x 13-inch baking pan, mix dry ingredients first with a fork, then mix in the 2 wet ingredients.
Bake for 25 minutes. Cut into squares while warm. Let cool and separate.

Any bar can be made without a mixer but these two recipes are done with a fork!

Flourless Quick Peanut Butter Cookies

1 c. peanut butter, chunky or creamy (I like chunky)
1 c. packed brown sugar, light or dark brown
1 large egg, slightly beaten
1 tsp. baking soda
1 c. chocolate chips (I found mini chips work better)

1. Heat oven to 350o
2. In medium sized bowl, beat together the peanut butter, brown sugar, egg and baking soda until the mixture is smooth and well-blended. Stir in chips until evenly distributed.
3. Drop the dough by slightly rounded teaspoonfuls onto ungreased baking sheets, spacing the mounds about 2 inches apart.
4. Bake one baking sheet at a time in the 350o oven until the cookies are puffed and slightly golden but still soft to the touch, about 10 minutes. Let the cookies cool on the baking sheet on a wire rack for about 5 minutes. Then transfer the cookies to the wire rack. Let cool completely.


Flourless Quick Peanut Butter Cookies:
1 cup PB
1 cup white sugar
1 Egg
1 tsp vanilla.
*mix together. flatten with fork as criss cross. bake for abt 10 min until golden.

Also mocha cake from by cookbook is fantastic.

There are so many great recipies that don’t need mixers I rarely take mine out. If I really need I’ll use my food processor when making potato kugel to beat eggs.

I make a bundt cake every Shabbos and cycle through the mocha cake, chocolate cake, cinnamon cake, lemon cake. Never need a mixer. Sometimes I’ll try something different but these are the ones I fall back too.

Ingredients
1 1/2 cups all-purpose flour (I do not recommend any other flour for this cake)
1 cup sugar
4 tablespoons cocoa
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons oil (I use a light olive oil)
1/2 to 1 teaspoon vanilla (I use 1 teaspoon)
1 tablespoon cider vinegar
1 cup cold water

This cake is so quick and easy to make because it can be mixed and baked right in the 8-inch square pan. Greasing the pan is not necessary. Mix flour (I prefer unbleached), sugar, cocoa, baking soda and salt with a whisk until well blended. Pour the oil, vinegar, vanilla, and cold water (all at once) on top of the dry ingredients. Stir until all the ingredients are thoroughly blended together but do not over-mix. Bake at 350°F for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.

Fool-proof. I make all sorts of other flavors by substituting flour for the cocoa powder (usually about half the amount) and adding a teaspoon of the other extract (in addition to the vanilla). Lemon is a family favorite.

Only two changes: use a bowl. It is very hard to mix even the thinnest batter in a pan. And use parchment paper. It just makes life easier.

I have also made wonderful cupcakes with this recipe.

I love this recipe. I pretty much only use spelt flour for all my baking and these taste pretty good. (I add chocolate chips as well)

INGREDIENTS

⅓ cup melted coconut oil or extra-virgin olive oil*
½ cup maple syrup or honey
2 eggs, preferably at room temperature
1 cup packed mashed ripe bananas (about 3 bananas)
¼ cup milk of choice or water (I used almond milk)
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon cinnamon, plus more for sprinkling on top
1 ¾ cups white whole wheat flour or regular whole wheat flour
⅓ cup old-fashioned oats (optional), plus more for sprinkling on top
1 teaspoon turbinado (raw) sugar or other granulated sugar, for sprinkling on top

trixx, do you make the chocolate chip cookies with coconut oil? Can I change that for regular oil?
