Does anyone have a good crumb cake recipe made with oil and eggs but no margarine or butter?

I substitute oil instead of margarine all the time and have never had any issue in a cake (sometimes issues with cookies). I use a little less oil than margarine so if it calls for 1 c margarine I'll use 3/4 c oil...

My go to crumb cake recipe...
Kosher Pallette
2 lg eggs
1 c non dairy milk
3 c flour
1.5 c sugar
4 tsp baking powder
1 tsp salt
1 c margarine (I use 3/4 c oil)
Topping:
2.5 c flour
2 c sugar
1/4 c cinnamon
1 c margarine (I use 3/4 c oil)
1 tbsp vanilla
Preheat oven to 350. Grease a 9 by 13 pan. Beat eggs and milk in a bowl. Combine flour sugar baking powder salt oil. Mixed with egg mixture. Pour batter into pan and sprinkle with topping. Bake 45 to 50 minutes.
I usually half the topping - it's way too much. Freezes very well!

4 cups flour
2 cups sugar
1 cup oil (a plastic 7oz cup)
Mix and take off 1 cup for crumbs.
Add 4 eggs
1 cup juice or seltzer (7 oz cup)
4 tsp baking powder
1 tsp vanilla extract
Pour into 3 9x9 pans and bake at 350 for 40 minutes, or until a toothpick comes out clean.

I dont see why not. It just might be a bit messy because of the crumb topping. This cake defines my childhood lol.

Thanks. I wanted to make into cupcakes so it's neater than cutting it. Does it cut into squares nicely, or crumb topping falls off? If you mean messy to make, I would rather that than messy on a platter.
