What can I cook under chicken?

What can I cook under chicken for Shabbos? I want to make potato kugel, so I don't want to use potatoes, and I used rice last week.

My husband won't touch most vegetables, so starch ideas?

Carrots and squash can roast at the same time or you can do a more sheetpan style where you take a baking pan and cook the chicken adding veggies like greenbeans, peppers, tomatoes, mushrooms, broccoli etc later on in the baking process.

Bulgur is good.
I like sweet potatoes.
Lots of lightly fried onions.
A mixture of root vegetables.
Pineapple onions and red pepper.
Garlic cloves from 2+ heads.

I meant SIDES not VEGETABLES

Like can you do pastas, farfel, orzo, couscous?

You can bake farfel in the oven separately in a different pan at the same time that the chicken is in the oven.

I think the other starches you mentioned will be soggy if you do it under chicken.

I agree with thunderstorm that stuff will get mushy. I have done a skillet recipe with chicken and orzo which is pretty good. https://www.budgetbytes.com/sk.....ives/ but it comes out kind of soft and not everyone likes it.

Buckwheat, rice and barley work really well. U can try pretty much any veggie u have on hand. I've done zuchinni, eggplant, butternut squash, sweet potato, mushrooms, carrots, cabbage... cabbage is my favorite. I love how the chicken flavours whatever is on bottom. Just toss the veggies with oil, salt and pepper. Delicious!

I do ferfal all the time, make sure to spice and I also put little fried onion bits for flavor. Comes out perfect. I bake for like 2 hours on 350 then leave in a 250 degree oven till the Seuda.

Eta - I put in the amount of water I would usually for the amount of ferfal according to the package, never soggy

We like it with pasta underneath, we like it either with the chicken covered, the pasta does get a mushy or with the chicken uncovered, the pasta gets a bit crispy, yum.
Sweet potato and normal potato and veggies definitely work the best though.

Chickpeas are delicious!
Also Lima beans, but you must soak and cook them for 20 min first. I do that with fried onions and loads of garlic.

A good friend once suggested a mixture of barley, buckwheat, and brown rice (equal amounts). If you cook the chicken covered and with the skin, no water needed! I sometimes vary the grains - bulgar, whole wheat berries etc, and it's delicious!

I'm assuming that you don't need to add any oil or other fat either, if you leave the skin on the chicken, right?
Also, can you give approximate amounts of the grains that you use?
Do you season them in any way or just the chicken is spiced?

I use about 1/2 c of each grain, no oil, some chopped onion and garlic. As for spicing them, I just season the chicken itself on both sides (season, turn over, season again). When I skin the chicken, I leave some of the fat and use a roasting bag so it stays moist.

What do you mean by no water?
When I make chicken over rice or bulgur I do 2:1 grain to (seasoned)water with the chicken on top.
Do you cook the grains first?
