I make this all the time, with chicken peices, not whole pieces. I don't follow her cooking directions, just bake as a normally bake chicken. .

If the grains are completely hidden under the chicken, I don't find that it needs water - as a matter of fact, if I do add water, some of the grains rise up on top of the chicken, and aren't properly cooked. Since it will be on the plata for a while, I do often add water right before Shabbos. For some reason when I do just white rice, it does seem to need water.

I often do quinoa, sometimes with diced onions mixed in.
