Anyone have a tried-and-true recipe that's not too complicated? I had it at Benny's and it was delicious...

I have one for chicken marsala if you would like to adapt it for salmon.

I got this from Gourmet Glatt once, and was well enjoyed!
10-12 thin chicken cutlets
1/2 cup flour
1 onion-cut into strips or rings
1 can mushrooms
2 tablespoons olive oil
2 tablespoons chicken soup mix
4 tablespoons brown sugar
1/2 cup water
1/3 cup marsala wine
salt and pepper
Combine flour with salt and pepper. Dip each cutlet into flour. Fry each cutlet for a few minutes on each side, leaving the middle pink. Remove from pan.
Sautee onions and mushrooms. Add everything else. Season with salt and pepper. Let it cook for a few minutes.
Pour sauce over chicken and bake on 350 for 20 minutes or so.
ENjoy!

Thanks!

If you were going to adapt this for salmon and make it dairy, what would you change?

Switch the oil to butter and the water to heavy cream.

Thanks! What would you do about the chicken soup mix?

You can leave it, or switch to mushroom soup mix.

It might need less soup mix or more water since the heavy cream will thicken the mixture.

No, I believe that's an Indian dish.

This is Marsala (with an R) - it's a type of wine.

(I know the post I'm quoting is old but the thread was bumped and this question had not been addressed)
